
Makes 1 Loaf
Ingredients:
2 cups diced and peeled Granny Smith Apples (about 2 & 1/2 or 3 large apples)
1 cup of white sugar
2 tbsp chopped walnuts
1 room temperature egg
1 & 1/2 cup all purpose flour
1 tsp baking soda
1/2 tsp + 1/2 tsp pumpkin spice (if you do not have pumpkin spice you can substitute it with cinnamon)
1/2 cup butter (1 stick), melted
Instructions:
- First preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius), then grease and flour an eight by four inch loaf pan.
- In a large bowl, start off by mixing together your diced apples, sugar and half tsp of pumpkin spice until everything is well combined. Set that aside and stir the mixture occasionally.
- In a separate bowl whisk together your flour, baking soda, and the other half tsp of pumpkin spice.
- Next stir your dry ingredients into the apple mixture along with the melted butter, egg, and vanilla extract. Mix everything together until a consistent batter forms (Make sure that there are no lumps of flour in the batter).
- Now spoon your batter into the greased loaf pan, spread it out, and sprinkle the chopped walnuts on top. Place the loaf into the oven to bake for one hour and ten minutes.
- When the loaf is done baking, take it out of the oven and let it cool in the pan for 15 minutes.
- Once the loaf is done cooling, turn it out onto a plate, cut yourself a generous slice, and enjoy!
*The loaf will last for 1 week in the fridge
